鲜 · At Its Peak! Thursday, Sept 24th!

For September dinner, I keep thinking about one Chinese word — 鲜 (xiān).

鲜 means fresh, but it’s more than just fresh. It’s that natural sweetness and umami you taste when an ingredient is really at its best.

September is one of my favorite time to cook in Montana. The vegetables are at their peak, full of flavor and beautiful colors. For this dinner, I want to bring those local vegetables together with delicate seafood and freshly made tofu, and cook them in the Chinese way I know and love.

Nothing too complicated. Just really good ingredients, cooked simply, and letting their natural flavors shine.

This dinner is a celebration of 鲜 — Montana at its peak, with a little taste of where I come from.
